Creamy Shrimp-and-Macaroni Salad

Poached shrimp lends a taste of the beach in Creamy Shrimp-and-Macaroni Salad.

1 (8-oz.) package elbow macaroni
1/2 cup chopped celery
1/2 cup chopped green onions
1/2 cup plus 3 Tbsp. mayonnaise
1/4 cup chopped fresh parsley
1 tablespoon country-style Dijon mustard
1 tablespoon chopped fresh tarragon
2 teaspoons white wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper


Prepare macaroni according to package directions; rinse with cold running water. Stir together celery, green onions, mayonnaise, parsley, Dijon mustard, tarragon, vinegar, sugar, salt, and pepper. Coarsely chop Perfect Poached Shrimp; stir shrimp and mayonnaise mixture into pasta. Cover and chill 1 hour.
