Combine cabbage and onion in a bowl. Combine sugar, mayonnaise, vinegar, salt, and pepper in a small bowl; stir well with a wire whisk. Pour dressing over cabbage mixture, and toss well. Cover and chill 1 hour.
We really liked this recipe. It is more on the line of a traditional slaw than ones that just use a vinegar dressing, yet not yucky overloaded with mayonnaise like you purchase at the store. This is traditional, but lighter and refreshing. I ate mine on a BBQ sandwich and it was perfect. My husband ate his on the side and loved it. I did use green onion instead of a regular one because I had some I wanted to use.
There is nothing really *wrong* with this recipe, but it is not "creamy" and is also somewhat bland. I would change two things:
1) Add more mayonnaise (I use homemade, full-fat), or some sour cream and/or yogurt to make it "creamy." The more fat, the more creamy and the more flavorful the slaw will be.
2) Add some celery seeds, which would definitely boost the flavor.
Haven't tried it yet, but hopeful. I'll post again after. Right now, I'm just trying to figure out how 3 cups of cabbage, plus onion and dressing, becomes 2 cups of salad (as indicated in the number and size of servings.) This has left me wondering how much cabbage I should really put in.
