Though usually made from yellow corn, tortilla chips can also be made from blue or red corn. Using the variety of colors turns this simple dip into something a bit more festive.

1. Combine all ingredients in a medium-size bowl. Stir with a rubber spatula until blended. Cover and chill in refrigerator at least 1 hour or overnight. Serve with tortilla chips.
