Excellent side dish! We had it alongside a main dish, but I can definitely see it being used as a topping for tacos, burgers, etc. Next time I'll shred the cabbage finer. We used all Napa cabbage, and it tasted great! This recipe is a very fresh, fun spin on traditional coleslaw! I recommend doubling the dressing for more flavor.
my family went crazy over this recipe ... it was supposed to be part of a brunch, but the adult kids said "fish tacos!" ... and we were off and running with some great coated-and-cooked white fish. Add the white corn tortillas and we had best fish tacos ever!! passed it on to all my "walking gal friends" and they agree! I used Greek yogurt that has slight amount of honey (instead of plain and adding sugar)... and I added a tad of low-fat mayo to stretch it. just yummy!
