Creamy Lemon-Shallot Vinaigrette

Ingredients

  • 1 tablespoon minced shallot
  • 1/2 teaspoon lemon zest
  • 1/4 cup fresh lemon juice
  • 1/3 cup light olive oil
  • 2 tablespoons crème fraîche or sour cream
  • 1 tablespoon minced Italian parsley
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper

Preparation

Combine all ingredients in a jar; seal and shake well to blend.
