Creamy Lemon Soup with Lamb Mint Meatballs

so easy to make. nice traditional greek soup.

this was delicious. made the meatballs 50% lamb, 50% extra lean ground beef for a healthier version. also threw a handful of fresh spinach in the bowl, ladled the soup over and finished with a squeeze of lemon and mint. a total keeper.

I made this soup last night for my boyfriend and myself. It was a hit! Sooo good. I cook A LOT and he said it was his favorite thing I've made so far. I can't wait to make it again!
