This is a really simple and really great side salad for a Tex-Mex menu. I served it with Tex-Mex Bacon Cheeseburgers. So easy. I added 1 tablespoon of pureed chipotle chiles in adobo and it was too much. Probably 1/2 a tablespoons would be perfect.

- 1/2 head iceberg lettuce, cored and quartered
Preparation
- 1. Place first 3 ingredients in a blender; process until smooth. Serve over lettuce wedges.
