Creamy Calypso Fruit Soup

  • 1 cup Mahatma® or Carolina® Whole Grain Brown Rice, cooked and cooled
  • 1 cup pineapple juice
  • 1 cup orange juice
  • 1 ripe banana, mashed
  • 1 can (11.5 ounces) mango nectar
  • 2 tablespoons mint, snipped
  • 1 tablespoon lime juice
  • 1/4 cup tropical dried fruit bits
  • 2 tablespoons almonds, sliced
  • 2 tablespoons crystallized ginger bits
  • flaked coconut
  • mint sprigs

How to Make It

  1. Place the rice and the next 6 ingredients in a blender container. Blend till smooth. Stir in the rest of the ingredients; except the flaked coconut and mint sprigs; cover and refrigerate until chilled. Serve garnished with flaked coconut and mint sprigs.
