1 cup Mahatma® or Carolina® Whole Grain Brown Rice, cooked and cooled
1 cup pineapple juice
1 cup orange juice
1 ripe banana, mashed
1 can (11.5 ounces) mango nectar
2 tablespoons mint, snipped
1 tablespoon lime juice
1/4 cup tropical dried fruit bits
2 tablespoons almonds, sliced
2 tablespoons crystallized ginger bits
How to Make It
Place the rice and the next 6 ingredients in a blender container. Blend till smooth. Stir in the rest of the ingredients; except the flaked coconut and mint sprigs; cover and refrigerate until chilled. Serve garnished with flaked coconut and mint sprigs.
