This dish is a huge hit. I have made it several times and each time it is outstanding. I use it as a special occasion dish for my vegetarian parents and as a way to get my husband who hates squash to eat some squash. I didn't change a thing about the recipe and it comes out perfect every time.

I was sooooo skeptical. Especially when I read the review "tastes like Mac n cheese," OMG I will replace my Mac cravings with this recipe. BTW was almost done and realized I had no parm. Used 3 slices of munster instead.

Delicious! Except it's NOT VEGETARIAN! I used vegetable broth in place of the chicken broth and thought it was still wicked good!!

AUGH! If you make risotto with any regularity, do NOT try this version. I gave it a shot because I had yet to have a recipe recommended by Cooking Light that I didn't like. Well, this was it. Gelatinous and sticky, this was absolutely awful. My husband took one look and asked what was wrong with it. And it didn't even save more than ten or so minutes overall! What a waste. However, if you are crafty, you MAY choose to use the leftovers for scrapbooking glue. Hah.

Delicious and easy. I did substitute vegetable broth instead of chicken and fresh squash over frozen ,but this is a recipe that I will definitely use again.

I have not made this yet, so one star is not accurate. The reason I'm reviewing this before I actually make it is this: This recipe is not vegetarian, as it calls for chicken stock. I plan to use vegetable stock instead.

Solid risotto recipe, though I made with fresh butternut squash, not frozen. Also, be careful on the first step with the oil. Luckily I had bought extra rice because mine burned. I decreased the time and stirred halfway in between. Also, be sure to use the thyme, it absolutely makes the recipe.

I love risotto but with 2 dogs, a toddler and a husband I can't commit 20 minutes to stand in one place and stir. This recipe WORKED! Be sure to let the risotto sit until the water is absorbed, at the end. Can't wait to try it with other mix-ins (like bacon and peas or mushrooms).

This is a great recipe that I've made several times. To the people who have given it low reviews amazes me. If they can't handle making this correctly I question their cooking skills. This recipe is definitely a keeper. As for rating it low because of chicken broth is totally stupid. It doesn't claim to be vegetarian. So stop using your beliefs to rate it.

It was delicious! I put in the frozen butternut squash and used 6-cheese italian cheese since i had on hand. I was surprised as to how delicious it was! Easy to make in the microwave while other things were cooking, better than normal risotto preparation

I couldn't find frozen butternut squash and substituted frozen winter squash instead. It lacked flavor but could tell it has potential, I will see if I can find butternut squash and retry it.
