Combine milk and flour, stirring well with a whisk; set aside.
Heat a medium saucepan over medium-high heat. Coat pan with cooking spray. Add leek and garlic; sauté 2 minutes or until tender. Add spinach, and sauté 1 minute. Stir in milk mixture; cook 1 1/2 minutes or until slightly thick, stirring occasionally. Stir in cheese, salt, and pepper, stirring until smooth; cook 1 minute.
I've made this many times and like it very much, especially paired with a good steak. I made no changes beyond adding a squirt of fresh lemon juice at the end and using garlic salt. I have also used scallions instead of leeks with fine results. Also super simple to adjust the quantities; I've even made just 25% when I'm alone for dinner and it works fine.
I thought this was soo good and easy too! I don't have too much time for fussy side dishes so this is a great recipe for when you need an easy side that is still classy and tasty. I added sauteed mushrooms and some grated nutmeg. Delicious!
This spinach is outstanding. I love the extra dimension the leek gives to the dish. I added just a touch more cream cheese but otherwise made it exactly as the recipe states. If you are looking for an interesting and delicious side dish, this is your answer. It's certainly special enough to make for company, as well.
This is now my go-to spinach recipe. I prefer leeks but finely chopped onions work, and I just use a bag, box, or bunch of fresh spinach. The leftovers separate a little in the fridge, but don't be alarmed: mix it up as you reheat and it's wonderful. Add a touch of nutmeg for a slightly richer taste for special occasions.
