Saute' onions, in 4 TBLS of butter until onions are soft.(moving onions as butter foams.). Add 3 TBLS of flour & cook for one minute. Cooking the flour eliminates the starches. add your vegtable next. Pour in 6 c chicken broth and a cup of white wine. A tsp of fresh thyme cove & simmer pour into food processor till smooth pour back into pot add salt & pepper & one cup of heavy cream.
