Luscious Cream Cheese Frosting tops our Mini Orange Creamsicle Cupcakes.
Makes 3 cups
6 ounces cream cheese, softened
6 tablespoons butter
2 to 2 1/2 tablespoons milk
1 teaspoon vanilla
4 1/2 cups powdered sugar
Beat first 4 ingredients at medium speed with an electric mixer until creamy. Gradually beat in powdered sugar at low speed until blended. Beat at high speed until light and fluffy. (Add additional milk, 1 teaspoon at a time, if necessary to achieve desired consistency.)
