Very good muffin. I followed the recipe as written. The cornmeal added a nice texture and heartiness. I was expecting more of a cake than cornmuffin texture. I baked the muffins in a dark pan which resulted in a slight dryness, so next time I will reduce the cooking time by about 3-4 minutes. I will definately make these again

My family loves these muffins; the texture is good, as is the flavor. Might add a bit of orange oil or extract for extra orange flavor, but we'll definitely make them again.

Very good. I did not have ricotta cheese on hand so used Greek style lemon yogurt. Worked very well!

These muffins were good. My only suggestion is to eat them the same day you bake them because they tasted dried out the second day.
