1/4 cup sliced cranberries
16 thin lemon rind strips
5 to 6 fresh mint leaves, cut into thin strips
1 (8.4-oz.) can sparkling cranberry juice
Divide first 3 ingredients among each compartment of 1 ice-cube tray. Combine cranberry juice and 1/2 cup water. Pour into tray; freeze 4 hours or until firm.
