Cranberry-Apple Pie with Pecan Shortbread Crust

    This received rave reviews at Thanksgiving today. I was a little wary of making the shortbread crust. It was much easier than I thought and turned out very well. I had also not made an apple pie in a spring form before. With the shortbread up the side, it turned out very pretty. Would have been at home in a restaurant's pastry case.

    Filling was great but the crust was too rich, heavy and crumbly. No one wanted seconds at Thanksgiving.

    Made this without the cranberries and it was delicous. The shortbread crust worked well as an apple pie only crust.
