Crab Salad Cucumber Stacks
These are like bite-size crab salad sandwiches. Instead of bread, we've used a crisp rice cracker and added a slice of cool cucumber for texture and flavor.

Ingredients
- 8 ounces freshly cooked crab
- 2 tablespoons minced red onion
- 3 ounces cream cheese
- 1 tablespoon chopped fresh dill, plus sprigs for garnish
- 1/4 teaspoon black pepper
- 1 teaspoon lemon zest
- Asian-style rice crackers
- About 20 very thin slices English cucumber
Preparation
- Mix crab, onion, cheese, dill, pepper, and zest together. Set crackers on a serving plate and top each with about 1 tbsp. crab salad. Top each with a cucumber slice and a dill sprig.
