Couscous with Snow Peas

Ingredients

  • 1 shallot, minced
  • 1 tablespoon butter, melted
  • 1/2 cup vegetable broth
  • 1/2 cup uncooked couscous
  • 1/2 cup thinly sliced fresh snow peas
  • 1/2 cup diced orange bell pepper
  • 1 tablespoon finely chopped fresh chives
  • 1/4 teaspoon salt

Preparation

Sauté shallot in butter in a saucepan until tender. Stir in vegetable broth; bring to a boil. Stir in couscous, snow peas, bell pepper, chives, and salt. Remove pan from heat, and let stand, covered, 5 minutes. Fluff mixture with a fork.
