1 1/4 cups fat-free, less-sodium chicken broth
1 (5.8-ounce) package olive oil and garlic-flavored couscous
1/3 cup diced carrot
1/3 cup diced radishes
1/3 cup currants
1/3 cup chopped peanuts
1/3 cup chopped fresh cilantro
1/4 cup chopped green onions
1/4 cup fat-free balsamic vinaigrette


Bring broth to a boil. Stir in couscous and flavoring packet. Remove from heat; cover and let stand 5 minutes.

Add carrot and remaining ingredients to couscous; toss well. Serve immediately or chill thoroughly.
