Cornichon-Caper Sauce

Makes about 1 1/4 cups

If you don't have Cornichon-Caper Sauce stocked in your fridge, and ready for salmon suppers this week, you're not doing your dinner justice.Capers and cornichons offer briny personality, while fresh tarragon lends a distinct herbaceous note to this elegant and versatile mayonnaise-based spread. 


  • 3/4 cup mayonnaise
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup chopped cornichons
  • 2 tablespoons chopped capers
  • 2 tablespoons finely chopped fresh tarragon
  • 1 tablespoon whole-grain Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 2 green onions, finely chopped

How to Make It

  1. Whisk together mayonnaise and oil in a medium bowl until well combined. Stir in cornichons and remaining ingredients; cover and refrigerate until ready to serve.
