Cornbread Topping

Yield Makes 2 1/2 cups
Extra-sharp Cheddar cheese is stirred into this buttermilk Cornbread Topping that crowns our Beef and Chorizo Pot Pie.

Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1 large egg
  • 1/4 cup canola oil
  • 1 cup (4 ounces) shredded extra-sharp Cheddar cheese

How to Make It

  1. Stir together first 5 ingredients in a medium bowl. Add buttermilk, egg, and oil, and stir until smooth. Stir in cheese.
