Corn and Smoked Mozzarella Mashed Potatoes

SOOOOO GOOD! Nice switch up from the normal mashed potatoes.

This is a great alternative to boring, average mashed potatoes. I substitued smoked mozzarella with smoked provolone. Next time I would skip the toasting of the corn or buy a bag of frozen toasted corn at Trader Joes. Also, I used buttermilk instead of milk. This side was served with Italian Meatloaf.

Unusual and scrumptious combination of flavors. Will make this again and again!

These were excellent! I pared them with short ribs, and my husband and I loved them! I also used Trader Joe's roasted corn and it worked perfectly. I didn't have smoked cheese, so I substituted regular motz....you couldn't tell the difference.

Outstanding! Made exactly as directed and served with grilled lobster tails and CL Lemon Broccoli.

This was a outstanding side. Just like the picture I left some of the potatoes chunky. Served with grilled pork chops .. nothing but raves!
