Corn Salsa

Yield 3 cups

Ingredients

  • 1 (15 1/4-ounce) can whole kernel corn, rinsed and drained
  • 1/2 (4.5-ounce) can chopped green chiles, drained
  • 1/2 (2.25-ounce) can sliced ripe olives, drained
  • 1 small tomato, chopped
  • 2 jalapeño peppers, seeded and diced
  • 1 1/2 tablespoons white vinegar
  • 2 1/2 tablespoons olive or vegetable oil
  • 1/4 teaspoon salt

How to Make It

  1. Stir together all ingredients in a large bowl. Cover and chill, stirring often, at least 2 hours.
