Corn Pone

Ingredients

2 cups cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon shortening
1 1/2 cups milk

Preparation

Combine cornmeal, baking powder, and salt in a medium mixing bowl, stirring well. Cut in shortening with a pastry blender until mixture resembles coarse meal. Add milk, stirring just until dry ingredients are moistened.

Drop batter by tablespoonfuls onto a hot, lightly greased griddle or skillet. Cook until golden brown, turning once. Serve hot.
