Grilled Corn, Poblano, and Black Bean Salad

I made this for the 4th of July and it was a hit. I couldn't find a poblano chile, so an Anaheim chile stood in. I added a jalapeno for an additional kick. Not too spicy if you take out all the seeds. I did not grill the avocado. I love avocado and I'm not taking the chance that it gets bitter if left on too long. That goes in "a la natural!" It's great the first day, but we liked it even better after standing one day. Made it again tonight with the chicken recipe. Can't wait to dig in!

Loved this recipe! Even my family - who is not as excited as I am about veggies - really enjoyed it. Such a simple recipe with wonderful flavors. The grilling takes a little time, but the recipe is very easy to make.

Paired with ancho chicken thighs which was a good choice. Grilled avocado which I thought was good. Could have added a jalapeño for a bit of heat.

This is a great dish, but I wouldn't make it unless I was already firing up the grill. I paired this with the Vampire Steak. For leftovers, I'm going to use corn tortillas and wrap this recipe with the remaining steak for tacos. Next time, I plan to double the corn and red bell pepper and I'll halve the cilantro... a little goes a long way. Also, I'm going to keep the avocado fresh (I didn't think grilling it added anything to it) & dice it making sure to pour the lime juice over the avocado to keep it from going brown too quickly.

Great summer side. I grilled everything except the avocado the day before and grilled the avocado after the meat came off the grill to rest. Then I mixed everything together and served it. Easy and delicious. I did not use all of the dressing and added a red jalapeno to the grilling for a little kick.

I made this a few days ago to go with some grilled chicken. I thought it was pretty good, but my wife loved it. It's kind of a pain to grill the corn, but it's not difficult to make. I didn't care for the balck beans so much, so I'll use kidney beans next time. There will be a next time.

This was fantastic! I made it as written with just a little less lime juice. I made it with the Vampire Steak, but would be a great pot luck dish. The bowl was scraped clean; definitely a keeper.

This is good but would be better doubling the veggies. As is there are too many beans and the picture doesn't show it that way. The sliced avocado on top makes it special.

Another one of those terrific summer-in-a-bowl salads. Fresh and sweet, nicely balanced, great colors. Made to recipe except we decided not to grill the avocado. Served with CL's garlic-chipotle tacos.

This was easy and delicious. To keep it mild for my picky son, I replaced the poblano with an extra red bell pepper and it was still great. Otherwise, I followed the recipe exactly, and my whole family enjoyed it.

I can't even begin to say how good this recipe is. My husband literally licked his plate clean. He now asks for this on a regular basis. Good thing he likes to grill for me. It's time consuming, but worth EVERY minute!
