Corn Muffins with Jalapeños and Lime Butter

    I made this for the first time tonight to go with some black-eyed pea soup. My whole family loved it! The only problem was that I didn't want to stop with one serving!

    These were delicious! I'm only giving them a four because I thought the honey-lime butter was difficult to prepare. I left the butter out for a long time and it never softened to the consistency to mix with the lime and honey. I upped the jalepenos to 1 tbsp but like the notes on this recipe i would even try habeneros to give it an extra kick.
