Corn Fritters

Yield about 1 dozen


  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup milk
  • 2 cups whole kernel corn
  • 2 eggs, beaten
  • 2 tablespoons butter or margarine, melted
  • 1 tablespoon finely chopped onion

How to Make It

  1. Sift together flour, baking powder, salt, and pepper in a large bowl.

  2. Combine milk, corn, eggs, butter, and onion; mix well, and stir into dry ingredients.

  3. Drop mixture by tablespoonfuls into deep hot oil (375°). Fry until golden brown, turning once. Drain on paper towels. Serve hot.
