Corn Cups with Salsa Shrimp Salad

    The shrimp salad was ok, but the mayo was overpowering. I would halve the mayo and increase the salsa to give it more flavor. I didn't try the corn cups.

    I followed the directions to the T for the corn cups, but when I tried to put the rolled out dough in the muffin tins they fell apart! I will try again, and maybe some one can help me find out what I did wrong, I never worked with masa harina before so maybe I did something wrong. The Salad is good, but I would use more salsa verde next time.

    So, I have to explain this rating. The corn cups themselves were terrible. They completely fell apart. So, I used uncooked shrimp, basted with butter and sprinkled with a little chipotle chile powder and baked til cooked. Chopped up the shrimp (I used 4x) and added it to the recipe doubled, used sour cream in place of mayo. Didn't last at the party. Had to make more for myself. Great with tortilla chips, or some ate it with a fork as a salad.
