LOVED this recipe. It was so easy, and soo delicious. I brought it to a cook-out, and it was a huge hit. A lot of the people ate it as a dip with chips. I preferred it as a salad side. It was great both ways. I will make this often.

This was wonderful! My husband was skeptical because I wouldn't let him cook the corn first, but he agreed he was wrong. Made to go with Chicken & Summer Vegetable Tostadas (CL 2007 book) & sliced tomatoes/cucumbers. Will be using this a lot during the summer with fresh corn, but will keep in the rotation for winter with frozen corn.

Wow! This dish is absolutely perfect! Great flavor. Great texture. Great colors. Everything blends together well and the corn gives a nice crunch. (It didn't even matter that I used canned instead of fresh.)

So easy and delicious. The spices in the dressing are perfect together. I made it exactly as written and wouldn't change a thing. I can't wait for leftovers. A definite keeper and will make again. Served with Spicy Turkey Sloppy Joes.

This was a HUGE hit at a work gathering- nearly everyone asked for the recipe. It's light and fresh...and absolutely delicious. I added an orange pepper for extra color, but kept everything else the same. I HIGHLY recommend!

I followed the recipe exactly except for using thawed frozen corn instead of fresh. I personally found the dressing to be too sweet, although my boyfriend enjoyed it.

Forgot the sugar yet it turned out sweet from the corn. Easy, quick and tasty side. Served with vegetarian taquitos.

I thought this was just ok, but rated 3 stars because it got eaten up at the potluck I took it to (maybe because no one else took veggies!). I probably won't make this one again.
