Ingredients

  • 1 cup(s) black beans
  • 1 teaspoon(s) dark chili powder
  • 2 tablespoon(s) fresh chopped cilantro
  • 1 tablespoon(s) fresh chopped garlic
  • 1 cup(s) fresh Corn
  • 1/2 teaspoon(s) ground cumin
  • 1 jalapeno diced
  • 1/4 cup(s) olive oil
  • 1/2 cup(s) red, green, yellow pepper
  • salt and pepper
  • 1 small diced red onion

Preparation

drizzle corn with 1/2 olive oil and roast in 400 degree oven until corn begins to brown; remove and cool; combine all remaining ingredientswith chilled corn; salt and pepper to taste
