Mediterranean Coriander Seasoning Rub

  • 2 tablespoons coarsely ground coriander seeds (grind in a spice grinder or mortar)
  • Zest of 1 lemon

Preparation

Combine coriander, zest, and oil. In step 2, smear some mixture in pockets and the rest all over outside of chicken.
