- 1 1/2 cups chicken broth
- 1 1/2 cups uncooked regular rice
- 3/4 cup grated carrot
- 3/4 cup chopped celery
- 3/4 cup chopped fresh parsley
- 3/4 cup slivered almonds, toasted
- 1/2 cup chopped green onion
How to Make It
Bring chicken broth to a boil in a medium saucepan; add rice. Reduce heat; cover and simmer 20 minutes or until rice is tender and chicken broth is absorbed. Chill thoroughly.
Combine remaining ingredients, and mix until well blended. Chill thoroughly.
To serve, combine rice and vegetable mixture; toss gently. Serve chilled.
