Not quick, but worth it. I blanched some baby asparagus and threw it in. I also made extra dressing, just by adding a little more lemon juice and sherry vinegar. Also substituted the mint for dill and parsley. Found it had better flavor when marinating the dressing with the veggies before adding the quinoa. It is yummy and such a beautiful dish.

Cooking quinoa more than 8-10 minutes makes it very mushy. I prefer cooking and then draining after 8 minutes. It retains its crunch and texture. Then continue with the rest of the recipe and you'll have a homerun!

I've never tried Quinoa before, but this recipe was part of a diet program my personal trainer designed for me, and today I had it for the first time, and I was very happy with the tastiness of it! Very healthy and tastes great too! I'll be saving the leftovers for lunches later this week. Thanks!

Yummy!! I never bring anything to potlucks because I'm always afraid people won't like it. This one goes the next family get-together!! Added extra veggies and cheese, and the dressing was still enough.

My husband and I both loved this salad as a side dish. Then I tossed some leftover broiled salmon in with the leftover salad and it made a fantastic entree salad for lunch the next day. This is a keeper.

Delicious, healthy and filling. My fish didn't turn out and this dish saved the meal! I would definitely bring to a pot luck and am looking forward to having leftovers as an easy lunch.

This is just delicious! It's healthy, but also has broad appeal. I'd definitely bring this to a picnic or potluck. I wouldn't call this "quick" though... it took me an hour and a half from start to finish (though admittedly, I'm still a bit of a cooking novice!)

I had been looking for more unique ways to use quinoa when I came across this recipe. It didn't fail to deliver. I served it over some slightly dressed fresh spinach leaves along with baked chicken breasts for dinner. My boyfriend loved it and wanted leftovers for lunch the next day! The dressing was adequate for the salad, but next time I will do what another reviewer suggested and marinate the veggies in it before mixing with the quinoa so that they have more flavor. I will also play around with some different herbs; some fresh parsley would also be delicious. It's also good to know now that this recipe makes a TON and can easily be halved, using whatever vegetables you have on hand.
