Ingredients
- 2 cups thinly sliced green cabbage
- 2 cups thinly sliced red cabbage
- 1 cup thinly sliced fresh spinach leaves
- 1 cup shredded carrot
- 1 cup chopped sweet red pepper
- 1/2 cup julienne-cut peeled jÃcama
- 1/2 cup chopped onion
- 1/2 cup white wine vinegar
- 1/4 cup sugar
- 2 tablespoons spicy brown mustard
- 1 tablespoon vegetable oil
- 1 teaspoon celery seeds
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Preparation
- Combine first 7 ingredients in a large bowl. Combine vinegar and remaining 6 ingredients, stirring well. Pour dressing over cabbage mixture; stir well. Cover and chill at least 2 hours.
