Cold Papaya Soup

Yield 2 cups


  • 1 medium papaya, peeled, seeded, and cubed
  • 1/4 cup freshly squeezed lime juice
  • 1/2 cup sugar
  • 1/2 cup Chablis or other dry white wine

How to Make It

  1. Place papaya in a small mixing bowl; pour lime juice over papaya, and toss gently. Set mixture aside.

  2. Combine sugar and wine in a small saucepan; bring to a boil, and remove from heat. Pour over papaya mixture, and stir gently. Cover and refrigerate until thoroughly chilled. Serve soup in chilled dessert bowls.
