At first bite I thought this was too salty. At second bite - and third, and fourth and so on - I thought it was absolutely perfect, especially once the cherry tomatoes were on the spoon as well! What I imagine cucumber sorbet might taste like, with a delicious hint of richness from the sour cream.
I have been making this for years. It does need a bit of adjustment with slightly more sour cream, lime juice and a bit more salt to be really great. It depends on the amount and flavor of the cucumbers. Just play with it a bit.
I tried several cucumber soups to try to use up some garden bounty. This was the CLEAR winner! I did cut the jalepeno down by 1/2 because I didn't want so much heat, but I honestly think this is the best cold cuke soup out there....plus it gives me a way to use up a bunch of Sweet 100 tomatoes at the same time!
