Cold Cucumber Soup

Yield 1 quart


  • 2 large cucumbers, peeled, seeded, and coarsely grated
  • 2 cups whipping cream
  • 1 cup plain yogurt
  • 1/4 cup tarragon vinegar
  • 1 clove garlic, crushed
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • Cucumber slices

How to Make It

  1. Combine all ingredients, except cucumber slices; stir well. Chill. Ladle into individual bowls. Garnish with cucumber slices.
