The first bite I took of this while it was still piping hot was nirvana. The mixture of bitter coffee, savory bacon and brown sugar...mmmm... This is essentially a recipe for Candied Bacon, which I am not saying is bad at all, but I wouldn't serve it with Pancakes or anything that requires syrup. I made it with some very savory scrambled eggs and hash browns and it went very nicely. I should note that if you are in the habit of putting your bacon on a paper towel to absorb the grease - don't. The sugar will make it stick to the paper.

Bacon turned out delicious. But I have to agree with RenegadeMike, this is more like a 'candied' bacon. I prefer a crisper bacon but the results are still very tasty!
