Yum... this recipe was very easy and so delicious! I didn't use a whole 7lb leg... just a 2 1/2lb portion and reduced the cooking time by a couple hours (20 mins @ 400, 20 mins @ 350, 4 hrs @ 250) and it came out beautifully. So tender and soft! The sauce is surprisingly thick after its blended and very gravy like. We served it over mashed potatoes and skipped the parsley. We will definitely make this again!

This was just terrific!! Guests were in from out of town so I prepared it in the a.m. and it baked while we golfed. What a fantastic and impressive meal we had at the end of our day. Served with Israeli couscous and oven baked asparagus. Easy and tasty.
