Cod-and-Creamed-Spinach Casserole

    This was really a winner! I prepared it using Orange Roughy, which is a great fish but not as thick as what was called for in the recipe. I prepared it about one hour ahead and let it sit with the spinach mixture on top until the company arrived. I then cooked it for about 15-20 minutes and it turned out perfect. I used half and half instead of heavy cream, and that did not get very thick, but worked fine. Everyone raved about it. I will definitely make it again.

    This is an easy delicious recipe. The crunchy panko-cheddar topping really made the dish. I used two boxes of frozen chopped spinach, thawed and squeezed dry, instead of fresh spinach and it worked really well. Would definitely make this again as I'm trying to incorporate more fish into our diet even though I'm not a big fish lover. Cod is very mild.

    Served this with jasmine rice. We liked it. It didn't blow our socks off but using frozen spinach made this super quick to assemble. The cheddar cheese was a little strong. I'd probably go with a something more complimentary of spinach like parmesan. Added some fresh lemon juice to the cod.

    Excellent simple recipe. I even used fat free half and half.
