Preheat oven to 400
1. Combine cornstarch, salt, and cayenne pepper in a zip lock bag
2. Beat egg whites in a small bowl
3. Add shrimp to zip lock bag to coat with cornstarch mix
4. Add egg whites to bag
5. Add coconut to bag
6. Lightly coat shrimp with cooking spray
7. Bake at 400 for 20 minutes, turning after 10 minutes
8. slice mango and avocado
