Makes 4 cups
2 cups chicken broth
1 (13.66-ounce) can coconut milk
1 3/4 cups uncooked long-grain rice
1/2 teaspoon salt
Bring broth and coconut milk to a boil in a large saucepan over medium-high heat; stir in rice and salt. Cover, reduce heat to low, and simmer 20 minutes or until liquid is absorbed and rice is tender.
