Coconut-Pecan Filling

1 cup sugar
1 cup whipping cream
3 egg yolks
1/2 cup butter
1 teaspoon vanilla extract
1 1/3 cups sweetened flaked coconut
1 cup chopped pecans, toasted


Combine first 4 ingredients in a medium saucepan; cook over medium heat, stirring constantly, 8 to 10 minutes or until thickened. Remove from heat, and stir in vanilla. Stir in coconut and pecans, and let cool completely.
