Coconut-Pecan Filling

Ingredients

  • 1 cup sugar
  • 1 cup whipping cream
  • 3 egg yolks
  • 1/2 cup butter
  • 1 teaspoon vanilla extract
  • 1 1/3 cups sweetened flaked coconut
  • 1 cup chopped pecans, toasted

How to Make It

  1. Combine first 4 ingredients in a medium saucepan; cook over medium heat, stirring constantly, 8 to 10 minutes or until thickened. Remove from heat, and stir in vanilla. Stir in coconut and pecans, and let cool completely.
