Coconut Icebox Cookies

Yield about 5 dozen

  • 3 eggs, lightly beaten
  • 1 cup sugar
  • 1/2 cup firmly packed brown sugar
  • 1 1/2 cups shortening, melted
  • 4 cups grated coconut
  • 5 1/2 cups sifted cake flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt

How to Make It

  1. Combine eggs, sugar, shortening, and coconut in a large mixing bowl; mix well.

  2. Sift together flour, baking powder, and salt. Add to egg mixture, stirring well.

  3. Press dough into a waxed paper-lined 8-inch square baking pan; cover and refrigerate overnight.

  4. Turn dough out of pan, and remove waxed paper. Slice dough in half, forming two 8- x 4-inch rectangles. Cut each portion crosswise into 1/4-inch slices. Place on ungreased cookie sheets; bake at 400° for 10 minutes or until lightly browned. Remove from cookie sheets, and cool on wire racks.
