Coconut-Cilantro Rice

  • 1 cup light coconut milk
  • 1/4 cup water
  • 1 cup uncooked long-grain white rice
  • 1/4 cup chopped cilantro

How to Make It

  1. Combine coconut milk and water in a medium saucepan over medium-high heat; bring to a boil. Stir in rice. Reduce heat to low; cover and simmer 17 minutes or until liquid is absorbed. Let stand 5 minutes. Stir in cilantro.
