Coconut-Cilantro Chutney



Makes 1 1/2 cups

2 cups fresh cilantro
1 cup unsweetened grated coconut
1 tablespoon coarsely chopped peeled fresh ginger
1 teaspoon kosher salt
1 teaspoon ground cumin
2 garlic cloves, coarsely chopped
2 tablespoons fresh lemon juice
3/4 cup water


Combine all ingredients in a blender; process until smooth, stopping occasionally to scrape down sides.
