Ingredients
- 8 cups shredded romaine lettuce
- 2 teaspoons cider vinegar
- 1 teaspoon orange juice
- 1/4 teaspoon crushed red pepper
- 3 tablespoons olive oil
- Salt and pepper
- 1/2 pound roasted turkey, cut into chunks
- 4 ounces bacon, cooked crisp and crumbled
- 1/2 cup crumbled blue cheese
- 3 large eggs, hard boiled, cut into quarters
- 1 cup dried cranberries
Preparation
- 1. Place shredded lettuce in a large mixing bowl. In a small bowl, whisk together vinegar, orange juice and crushed red pepper. Whisking constantly and vigorously, drizzle in olive oil until well combined. Season dressing with salt and pepper and toss with lettuce. Divide mixture among 4 bowls.
- 2. Arrange turkey, bacon, cheese, eggs and cranberries on top of lettuce; serve.
