Ingredients
- 3 cups fresh clementine juice
- 1 chopped shallot
- 1 fresh thyme sprig
- 2 tablespoons butter
- 1/4 teaspoon salt
Preparation
- Combine clementine juice, shallot, and thyme in a heavy saucepan; bring to a boil. Cook until syrupy and reduced to 1/3 cup. Strain mixture, and discard the solids. Stir in butter and salt. Brush the glaze on pork, chicken, or beef while roasting.
