I love this recipe! I added frozen peas and an extra half cup of noodles to make it a little heartier and less soupy and it was very flavorful and filling. Makes enough for 3-4 servings for dinner and enough for 2 lunches the next day. The only thing I wish I had done was add the beans a little earlier than suggested since they came out a little firmer than I like but was still ok. Will definately use this recipe many more times because it was super easy to make and calls for ingredients that I already keep in my fridge/pantry.

I sautéd gthe onions, garlic, celery and carrots for a few minutes before adding them to the crockpot. The soup turned out awesome. I will be fixing this one again.

We love this recipe!!! I add extra pasta and Italian sausage. My family has no idea how good this is for them!!! There is never any leftovers with this dish!!!

I love this recipe! I make it for family and friends who are feeling under the weather because it is so healthy and as much a comfort food as chicken noodle soup. It is hard to find escarole in the south so I substitute fresh chopped baby spinach.

Gotta love this one, super easy! My tip is: I always drain AND Rise all beans, it helps to remove the salt they pkg everything in cans with. Also only buy reduced sodium tomatoes, just as tasty. I also like using the vegetable pastas, adds more color and flavor to all recipes. They come in lots of shapes now! I added 2 cans of rinsed and drained beans, because we love them and rarely can find ways to use them up*!* ENJOY**
