Try this no-cook seafood salad made with chilled seafood for a refreshing dish.
1 orange, peeled
2 cups chopped, cooked, and chilled seafood (such as lobster and shrimp)
2 heaping tablespoons finely chopped celery
2 tablespoons chopped fresh parsley
2 tablespoons thinly sliced shallots or red onion
2 teaspoons fresh lemon juice
2 teaspoons white wine vinegar
2 tablespoons extra-virgin olive oil
1/2 teaspoon honey
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
How to Make It
Holding orange in the palm of your hand, slice between membranes, and gently remove whole segments.
Combine seafood and next 3 ingredients in a medium bowl; toss to combine.
Whisk together lemon juice and next 5 ingredients in a small bowl; drizzle over seafood mixture, tossing to coat. Add orange segments, and toss gently. Line 2 bowls with cucumber slices, and top with seafood salad.
